Amiwo (Beninese Red Cornmeal Porridge) Recipe 🍛🌶️

 


Amiwo originates from Benin, a country in West Africa. It is particularly associated with the southern regions of Benin, especially around Cotonou, which is the country's largest city and economic hub.


🧄 Ingredients:

For the Amiwo:
  • 2 cups cornmeal (fine or medium grind)

  • 4 tablespoons red palm oil (or a mix of palm and vegetable oil)

  • 1 medium onion, finely chopped

  • 3 tablespoons tomato paste

  • 1 bouillon cube (Maggi or similar)

  • Salt to taste

  • 4 cups water

Optional spices:
  • 1 teaspoon ground garlic

  • 1 teaspoon ground ginger

  • 1/2 teaspoon chili powder or crushed red pepper (optional for heat)

For serving (optional but traditional):
  • Grilled or fried fish (e.g., tilapia)

  • Stewed chicken or goat meat

  • Spicy tomato sauce or piment (hot pepper sauce)


👨‍🍳 Instructions:

Step 1: Prepare the flavor base

  1. Heat the palm oil in a pot over medium heat.

  2. Add chopped onions and sauté until soft and slightly golden.

  3. Stir in the tomato paste and cook for about 5 minutes, until it starts to darken and separate from the oil.

  4. Add bouillon, salt, and spices. Stir to combine.

Step 2: Make the cornmeal mixture

  1. Add 4 cups of water into the pot and bring to a boil.

  2. Slowly whisk in the cornmeal while stirring constantly to avoid lumps.

  3. Lower the heat and continue stirring until the mixture thickens to a dough-like consistency.

Step 3: Simmer and steam

  1. Reduce heat to very low, cover the pot, and let the Amiwo steam for about 10–15 minutes.

  2. Stir occasionally to prevent sticking or burning at the bottom.


🍽️ Serving Suggestions:

  • Serve hot alongside grilled fish, stewed meat, or bean sauce.

  • Garnish with sliced onions, tomatoes, and a spoonful of piment for that fiery Beninese kick!

  • Use red palm oil for authentic color and flavor.

  • If you're using coarse cornmeal, pre-soaking it helps shorten cooking time and improve texture.

  • For a vegan version, skip the meat and serve with a bean stew or fried plantains.
