Authentic Chicken Pho (Phở Gà) Recipe 🐔 🌿 🍲

 


Chicken Pho, or Phở Gà, is a fragrant and comforting Vietnamese noodle soup made with a rich, aromatic broth, tender chicken, and fresh herbs. This recipe will guide you through making a restaurant-quality Chicken Pho at home.


Ingredients

For the Broth:

  • 1 whole chicken (about 3–4 lbs)
  • 10 cups water
  • 1 large onion (halved)
  • 3-inch piece fresh ginger (sliced in half lengthwise)
  • 2 star anise
  • 3 cloves
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 1 teaspoon black peppercorns
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar (or rock sugar)
  • 1 teaspoon salt
  • 4 green onions (white parts for broth, green parts for garnish)
  • 1 bunch fresh cilantro stems (save leaves for garnish)

For Serving:

  • 14 oz dried banh pho (flat rice noodles)
  • 2 cups bean sprouts
  • 1/2 cup Thai basil leaves
  • 1/2 cup cilantro leaves
  • 1/2 cup sliced green onions (green parts)
  • 1 lime (cut into wedges)
  • 1–2 red chili peppers (sliced, optional)
  • Hoisin sauce (optional)
  • Sriracha sauce (optional)

Instructions

Step 1: Roast Onion and Ginger

  • Char the onion and ginger over an open flame (stovetop) or broil them in the oven until slightly blackened. This step enhances the broth’s depth of flavor.

Step 2: Prepare the Broth

  1. In a large pot, add the chicken and cover with 10 cups of water. Bring to a boil and simmer for 5 minutes.
  2. Remove the chicken, discard the water, and rinse the pot to remove impurities.
  3. Refill with fresh 10 cups of water, then add the roasted onion, ginger, spices (star anise, cloves, cinnamon, coriander seeds, peppercorns), fish sauce, sugar, salt, and the white parts of green onions.
  4. Bring to a simmer and cook uncovered for 35–40 minutes, skimming off any foam.

Step 3: Remove and Shred Chicken

  • Remove the chicken and let it cool slightly. Shred the meat into thin slices and set aside. Strain the broth through a fine-mesh sieve to remove all solids.

Step 4: Cook the Noodles

  • Soak the banh pho noodles in warm water for 30 minutes, then boil for 1–2 minutes until soft. Drain and set aside.

Step 5: Assemble the Pho Bowls

  1. Divide the cooked noodles into serving bowls.
  2. Top with shredded chicken.
  3. Pour the hot broth over the noodles and chicken.

Step 6: Garnish and Serve

  • Add bean sprouts, Thai basil, cilantro, green onions, and chili slices on top.
  • Serve with lime wedges, hoisin sauce, and Sriracha on the side.
