Chicken Alfredo Zoodles Recipe 🍗 🥒 🧀

Enjoy a lighter, low-carb twist on a classic Italian dish with Chicken Alfredo Zoodles! This dish combines tender chicken, rich and creamy Alfredo sauce, and fresh zucchini noodles for a satisfying meal that's both healthy and delicious.

Ingredients

For the Zoodles (Zucchini Noodles)

  • 4 medium zucchini, spiralized
  • 1 teaspoon salt (for drawing out excess moisture)

For the Chicken

  • 2 boneless, skinless chicken breasts (sliced into thin strips)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning

For the Alfredo Sauce

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground nutmeg (optional, for added depth of flavor)
  • ½ cup milk (for a lighter sauce)
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

Step 1: Prepare the Zoodles

  1. Spiralize the zucchini into noodle-like strands.
  2. Place the zoodles in a colander, sprinkle with salt, and let them sit for 10-15 minutes to release excess water.
  3. After 15 minutes, pat them dry with a paper towel to prevent a watery dish.

Step 2: Cook the Chicken

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken slices with salt, pepper, garlic powder, and Italian seasoning.
  3. Add the chicken to the skillet and cook for about 5-6 minutes per side until golden brown and fully cooked. Remove from the pan and set aside.

Step 3: Make the Alfredo Sauce

  1. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Pour in the heavy cream and milk, stirring constantly.
  3. Slowly add the grated Parmesan cheese and shredded mozzarella, stirring until melted and smooth.
  4. Season with salt, black pepper, and nutmeg (if using). Simmer for 3-4 minutes until the sauce thickens.

Step 4: Combine Everything

  1. Reduce the heat to low and add the zoodles to the sauce. Toss gently to coat the zoodles in the Alfredo sauce.
  2. Add the cooked chicken back into the skillet, mixing everything together.
  3. Cook for 2-3 minutes, just until the zoodles are warm and tender but not soggy.

Step 5: Serve & Enjoy

  1. Transfer the Chicken Alfredo Zoodles to serving plates.
  2. Garnish with freshly chopped parsley and extra Parmesan cheese if desired.
  3. Serve immediately and enjoy this creamy, guilt-free comfort meal!

Tips & Variations

  • Add Protein: Try shrimp or grilled salmon instead of chicken for a seafood twist.
  • Extra Flavor: Sprinkle in a pinch of red pepper flakes for a spicy kick.
  • Dairy-Free Option: Use coconut milk and nutritional yeast instead of cream and cheese.
  • Thicker Sauce: Stir in an extra tablespoon of cream cheese for a richer texture.

This Chicken Alfredo Zoodles recipe is the perfect balance of indulgence and nutrition, bringing all the creamy, cheesy goodness of traditional Alfredo pasta without the carbs. Enjoy! 🍽️
