Ingredients

For the Chicken:
  • 2 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 tablespoon olive oil
  • 1 tablespoon butter
For the Pasta & Sauce:
  • 12 oz (340g) pasta (spaghetti, fettuccine, or penne)
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • Juice of 1 ½ lemons
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon dried basil (or 1 tablespoon fresh basil)
  • 1 teaspoon dried parsley (or 1 tablespoon fresh parsley)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
For Garnish:
  • Fresh parsley, chopped
  • Extra Parmesan cheese
  • Lemon wedges

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente.
  3. Reserve ½ cup of pasta water before draining.

Step 2: Prepare the Chicken

  1. Pat the chicken dry with paper towels and season both sides with salt, pepper, garlic powder, onion powder, oregano, and thyme.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add the chicken and cook for about 5-6 minutes per side, until golden brown and fully cooked (internal temperature of 165°F/75°C).
  4. Remove from the pan, let it rest for 5 minutes, then slice into strips.

Step 3: Make the Lemon Herb Sauce

  1. In the same skillet, add butter and olive oil.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Stir in lemon zest, lemon juice, red pepper flakes, basil, and parsley.
  4. Pour in the heavy cream and stir well.
  5. Add Parmesan cheese and let it melt into the sauce.
  6. If the sauce is too thick, add some reserved pasta water to loosen it up.
  7. Taste and adjust seasoning with salt and pepper.

Step 4: Combine Everything

  1. Add the cooked pasta to the sauce, tossing to coat evenly.
  2. Add the sliced chicken and stir gently to combine.
  3. Let it simmer for 2 minutes to absorb the flavors.
