Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

For the Tomato Sauce:

  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 2 cups cherry tomatoes (halved) or 1 can (14 oz) diced tomatoes
  • 1/2 cup tomato sauce or crushed tomatoes
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth (or pasta water)

For Garnish:

  • 1/4 cup Parmesan cheese (grated)
  • 2 tbsp fresh basil (chopped)
  • 1 tbsp balsamic glaze (optional, for extra flavor)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the whole-grain pasta and cook according to the package instructions until al dente.
  3. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

Step 2: Cook the Chicken

  1. Heat 1 tbsp olive oil in a large pan over medium-high heat.
  2. Add the bite-sized chicken pieces and season with garlic powder, salt, pepper, oregano, and basil.
  3. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked.
  4. Remove the chicken from the pan and set it aside.

Step 3: Prepare the Tomato Sauce

  1. In the same pan, heat 2 tbsp olive oil over medium heat.
  2. Add minced garlic and chopped onion, sautéing for 2-3 minutes until fragrant.
  3. Add cherry tomatoes (or canned tomatoes), tomato sauce, red pepper flakes, dried basil, oregano, salt, and black pepper.
  4. Pour in the chicken broth (or reserved pasta water) and simmer for 8-10 minutes until the sauce thickens.
  5. Mash some of the tomatoes with a wooden spoon to create a rich, chunky texture.

Step 4: Combine Everything

  1. Return the cooked chicken to the pan with the tomato sauce.
  2. Add the drained whole-grain pasta and toss everything together until well coated.
  3. Cook for 2 more minutes, allowing the flavors to blend.

Step 5: Serve and Garnish

  1. Remove from heat and divide into serving plates.
  2. Sprinkle with grated Parmesan cheese and fresh basil.
  3. Drizzle with balsamic glaze for extra depth of flavor (optional).
