Chicken and Asparagus Pasta Recipe 🍽️🥦🍗

 



A delicious, creamy, and nutritious pasta dish with tender chicken, fresh asparagus, and a flavorful sauce. Perfect for a quick and satisfying meal!

Ingredients:

  • 8 oz (225g) pasta (penne, fettuccine, or spaghetti)
  • 2 boneless, skinless chicken breasts (sliced into bite-sized pieces)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 3 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1 cup (240ml) heavy cream or half-and-half
  • ½ cup (120ml) chicken broth
  • ½ cup (50g) grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp butter
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • ½ tsp dried Italian seasoning
  • ¼ cup fresh parsley (chopped, for garnish)
  • Lemon zest (optional, for a fresh twist)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to package instructions until al dente.
    • Drain and set aside, reserving ½ cup of pasta water.
  2. Cook the Chicken:

    • Heat 1 tbsp olive oil in a large skillet over medium heat.
    • Add the chicken, season with salt, black pepper, and Italian seasoning.
    • Cook for 5-7 minutes until golden brown and fully cooked. Remove from the skillet and set aside.
  3. Sauté the Asparagus:

    • In the same skillet, add the remaining olive oil and butter.
    • Sauté the onion for 2 minutes, then add garlic and asparagus.
    • Cook for another 3-4 minutes until asparagus is tender but still crisp.
  4. Make the Sauce:

    • Pour in the chicken broth and let it simmer for 2 minutes.
    • Lower the heat and add heavy cream, Parmesan cheese, and red pepper flakes (if using).
    • Stir until the sauce is smooth and slightly thickened.
  5. Combine Everything:

    • Return the cooked chicken to the skillet and stir to coat with the sauce.
    • Add the drained pasta and toss everything together.
    • If the sauce is too thick, add some reserved pasta water to reach desired consistency.
  6. Finish and Serve:

    • Sprinkle with fresh parsley and lemon zest for extra flavor.
    • Serve hot with extra Parmesan cheese on top.

Tips:
