Korean Bibimbap Recipe 🍚 🥢 🌶️

Bibimbap originates from South Korea, and while it's now popular across the entire country, it is especially associated with the city of Jeonju.

📝 Ingredients:

For the Bibimbap:

  • 2 cups cooked short-grain white rice (warm)

  • 200g (7 oz) beef (ribeye or ground), thinly sliced

  • 1 small zucchini, julienned

  • 1 small carrot, julienned

  • 100g (3.5 oz) shiitake or button mushrooms, sliced

  • 1 cup bean sprouts

  • 1 cup spinach leaves

  • 4 eggs

  • 1 clove garlic, minced

  • Toasted sesame seeds

  • Sesame oil

  • Cooking oil

  • Salt & pepper to taste

For the Beef Marinade:

  • 1 tbsp soy sauce

  • 1 tsp sugar

  • 1 tsp sesame oil

  • 1 tsp minced garlic

  • Black pepper to taste

For the Gochujang Sauce (Korean chili paste sauce):

  • 2 tbsp gochujang (Korean chili paste)

  • 1 tbsp sesame oil

  • 1 tbsp sugar or honey

  • 1 tbsp water

  • 1 tsp rice vinegar

  • 1 tsp minced garlic

🔪 Preparation Steps:

1. Marinate the Beef:

  • Mix the sliced beef with soy sauce, sugar, sesame oil, garlic, and pepper.

  • Let it marinate for at least 15 minutes (can be longer for deeper flavor).

2. Prep and Cook the Vegetables:

  • Zucchini: Sauté with a little oil and salt until tender.

  • Carrot: Sauté lightly, just until softened (keep some crunch).

  • Mushrooms: Sauté with a dash of soy sauce until soft and browned.

  • Spinach: Blanch briefly in boiling water, squeeze out water, season with sesame oil and salt.

  • Bean Sprouts: Blanch for a few minutes, then toss with sesame oil and salt.

3. Cook the Beef:

  • In a hot pan, cook the marinated beef until nicely browned and cooked through. Set aside.

4. Fry the Eggs:

  • Fry eggs sunny-side up, keeping the yolks runny for mixing later.

5. Make the Gochujang Sauce:

  • Mix all sauce ingredients in a bowl. Adjust sweetness or spice as preferred.

🍽️ Assembly:

  1. Place a scoop of warm rice in a deep bowl.

  2. Arrange the cooked vegetables and beef neatly on top in sections.

  3. Place the fried egg in the center.

  4. Drizzle with gochujang sauce and a few drops of sesame oil.

  5. Sprinkle with toasted sesame seeds.
