🍗 Jamaican Jerk Chicken Recipe

🌿 Ingredients
For the Chicken:

4 bone-in, skin-on chicken thighs (or mix of thighs and drumsticks)

1 tbsp vegetable oil

Juice of 1 lime (for cleaning the chicken)
For the Jerk Marinade:

6 scallions (green onions), chopped

1 medium onion, chopped

4 cloves garlic
-
2 Scotch bonnet peppers (adjust to heat preference), chopped

1 thumb-sized piece of fresh ginger, peeled and chopped

2 tbsp fresh thyme leaves (or 1 tbsp dried thyme)

2 tbsp soy sauce
-
1 tbsp brown sugar
-
1 tbsp allspice (ground)

½ tsp cinnamon
-
½ tsp nutmeg

Juice of 1 lime

2 tbsp vinegar (white or apple cider)

2 tbsp vegetable oil
-
1 tsp salt
-
½ tsp black pepper
🔪 Instructions
1. Clean the Chicken (Optional)

Rinse the chicken with lime juice and water to reduce raw flavor. Pat dry.
2. Make the Marinade

In a blender or food processor, combine all marinade ingredients.

Blend into a thick, slightly chunky paste.
3. Marinate the Chicken

Place the chicken in a large zip-lock bag or dish.

Pour marinade over the chicken and massage to coat evenly.

Cover and refrigerate for at least 4 hours, preferably overnight.
4. Grill or Bake

Grilling (Traditional Method):

Preheat grill to medium-high heat.

Cook chicken skin-side down first for 5–7 mins, then flip.

Grill for 25–30 mins total until the internal temp reaches 165°F (75°C).

Line a tray with foil and place a rack over it.
