🍗 Jamaican Jerk Chicken Recipe



🕐 Total Time: ~1.5 hours (plus marinating time)

🌿 Ingredients

For the Chicken:

  • 4 bone-in, skin-on chicken thighs (or mix of thighs and drumsticks)

  • 1 tbsp vegetable oil

  • Juice of 1 lime (for cleaning the chicken)

For the Jerk Marinade:

  • 6 scallions (green onions), chopped

  • 1 medium onion, chopped

  • 4 cloves garlic

  • 2 Scotch bonnet peppers (adjust to heat preference), chopped

  • 1 thumb-sized piece of fresh ginger, peeled and chopped

  • 2 tbsp fresh thyme leaves (or 1 tbsp dried thyme)

  • 2 tbsp soy sauce

  • 1 tbsp brown sugar

  • 1 tbsp allspice (ground)

  • ½ tsp cinnamon

  • ½ tsp nutmeg

  • Juice of 1 lime

  • 2 tbsp vinegar (white or apple cider)

  • 2 tbsp vegetable oil

  • 1 tsp salt

  • ½ tsp black pepper


🔪 Instructions

1. Clean the Chicken (Optional)

  • Rinse the chicken with lime juice and water to reduce raw flavor. Pat dry.

2. Make the Marinade

  • In a blender or food processor, combine all marinade ingredients.

  • Blend into a thick, slightly chunky paste.

3. Marinate the Chicken

  • Place the chicken in a large zip-lock bag or dish.

  • Pour marinade over the chicken and massage to coat evenly.

  • Cover and refrigerate for at least 4 hours, preferably overnight.

4. Grill or Bake

  • Grilling (Traditional Method):

    • Preheat grill to medium-high heat.

    • Cook chicken skin-side down first for 5–7 mins, then flip.

    • Grill for 25–30 mins total until the internal temp reaches 165°F (75°C).

  • Oven Baking (Alternative):

    • Preheat oven to 400°F (200°C).

    • Line a tray with foil and place a rack over it.

    • Bake chicken for 40–45 mins, turning once halfway. Broil for final 2–3 mins for char.

  • Rice and peas (kidney beans with coconut rice)

  • Fried plantains

  • Steamed cabbage

  • Festival (Jamaican fried dumplings)


🌶️ Tips

  • For authentic smoky flavor, use pimento wood or wood chips if grilling.

  • You can adjust the spice level by using fewer Scotch bonnets or substituting milder chilies.
