🍜 Pad Thai Recipe


Pad Thai, the iconic stir-fried noodle dish from Thailand that’s beloved around the world for its perfect balance of sweet, sour, salty, and spicy flavors.

📋 Ingredients:

For the Pad Thai:

  • 200g (7 oz) flat rice noodles

  • 200g (7 oz) shrimp (or chicken or tofu), peeled and deveined

  • 2 tablespoons vegetable oil

  • 2 cloves garlic, minced

  • 2 eggs, lightly beaten

  • 1 cup bean sprouts

  • 1/4 cup chopped green onions (scallions)

  • 1/4 cup roasted peanuts, chopped

  • 1 lime, cut into wedges

  • Fresh cilantro (optional)

For the Sauce:

  • 3 tablespoons fish sauce (or soy sauce for vegetarian)

  • 1 tablespoon tamarind paste (or 1.5 tbsp lime juice as substitute)

  • 1 tablespoon brown sugar (or palm sugar)

  • 1 teaspoon chili flakes (adjust to taste)

  • 1 tablespoon oyster sauce (optional, enhances flavor)


🔪 Instructions:

1. Prepare Noodles:

  • Soak the rice noodles in warm water for 20–30 minutes until soft but not mushy.

  • Drain and set aside.

2. Make the Sauce:

  • In a small bowl, mix the fish sauce, tamarind paste, sugar, chili flakes, and oyster sauce until well combined. Adjust the balance of sweet, sour, and salty to your taste.

3. Cook the Protein:

  • Heat 1 tablespoon oil in a wok or large skillet over medium-high heat.

  • Add the shrimp, chicken, or tofu. Cook until browned and cooked through. Remove and set aside.

4. Scramble the Eggs:

  • Add another tablespoon of oil to the pan.

  • Add minced garlic and sauté for 30 seconds.

  • Pour in the beaten eggs and scramble until just set.

5. Add Noodles and Sauce:

  • Add the drained noodles to the pan.

  • Pour in the sauce and toss everything together using tongs or a spatula until the noodles absorb the sauce and are evenly coated.

6. Combine Everything:

  • Return the protein to the pan.

  • Add bean sprouts and green onions.

  • Stir-fry for another 1–2 minutes until everything is heated through but still fresh and vibrant.


🌿 Serve:

  • Plate the Pad Thai hot.

  • Garnish with chopped peanuts, lime wedges, and optional fresh cilantro.

  • Serve with extra chili flakes and fish sauce on the side for customization.


🔥 Tips:

  • Don’t over-soak noodles or they will become mushy.

  • Use a hot pan for quick stir-fry to maintain the dish’s texture.

  • Tamarind paste gives authentic tang, but lime juice can substitute in a pinch.
