200g (7 oz) spaghetti or linguine

4–6 cloves garlic, thinly sliced

2 tbsp chopped fresh parsley (optional)

Grated Parmesan or Pecorino Romano (optional, non-traditional but tasty)

Zest of 1 lemon (optional for freshness)
🔪 Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente according to the package instructions. Reserve 1/2 cup of pasta water before draining.
2. Infuse the Oil:
While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
Add the sliced garlic and gently sauté for 2–3 minutes until golden and fragrant (not brown or burnt). Stir frequently.
3. Add Chili Flakes:
Once the garlic is golden, stir in the red pepper flakes and cook for 30 seconds to release flavor. Turn off the heat if the pasta isn't ready yet to avoid overcooking.
4. Combine with Pasta:
Drain the pasta and immediately transfer it to the skillet. Turn the heat back to low.
Toss everything well to coat the pasta evenly. Add a splash of the reserved pasta water a little at a time to help the sauce cling and give it a silky texture.
5. Finish:
Add fresh parsley, lemon zest, and cheese if using. Toss again to combine.
🍽️ Serving Suggestion:
Plate the pasta while hot and drizzle a little extra olive oil on top. Garnish with more parsley or cheese if desired. Serve with crusty bread and a glass of chilled white wine 🍷 or sparkling water.
