Cracked Conch Recipe (Bahamas Style) 🐚🍤🌴



Cracked Conch is a beloved Bahamian dish featuring tenderized conch meat that is breaded, fried to golden perfection, and served with a tangy dipping sauce. Here’s how you can make it at home!

Ingredients:

  • 2 lbs fresh conch (cleaned and trimmed)

  • 1 cup all-purpose flour

  • 1 cup cornmeal (optional for extra crispiness)

  • 2 eggs

  • ½ cup evaporated milk

  • 1 teaspoon hot sauce (optional)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

  • ½ teaspoon paprika

  • ½ teaspoon onion powder

  • ½ teaspoon cayenne pepper (optional)

  • Vegetable oil (for frying)

  • Lemon wedges (for serving)

For the Dipping Sauce:

  • ½ cup mayonnaise

  • 2 tablespoons ketchup

  • 1 teaspoon hot sauce

  • 1 teaspoon fresh lime juice

  • ½ teaspoon garlic powder

Instructions:

  1. Prepare the Conch:

    • Place the cleaned conch between two pieces of plastic wrap and pound it with a meat mallet or rolling pin until tenderized.

    • Cut the conch into strips or small pieces for easy frying.

  2. Season the Conch:

    • In a bowl, season the conch with salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper. Let it marinate for about 15 minutes.

  3. Prepare the Breading Station:

    • In one bowl, whisk together the eggs, evaporated milk, and hot sauce.

    • In another bowl, mix the flour and cornmeal (if using).

  4. Coat the Conch:

    • Dip each piece of conch into the egg mixture, then coat it thoroughly with the flour mixture. Shake off any excess flour.

  5. Fry the Conch:

    • Heat about 1 inch of vegetable oil in a frying pan over medium-high heat until it reaches 350°F (175°C).

    • Fry the conch pieces in batches for 2-3 minutes per side or until golden brown and crispy.

    • Remove and drain on paper towels.

  6. Make the Dipping Sauce:

    • In a small bowl, mix the mayonnaise, ketchup, hot sauce, lime juice, and garlic powder. Stir until well combined.

  7. Serve:

    • Serve the crispy cracked conch with the dipping sauce and lemon wedges on the side.
